.Pork and gooseberries
Most people don't think of meat as sweet but it is. And pork is the sweetest of them all. Which is why marrying these sweet pork chops with sour gooseberries works so well. Any sharp fruits like apple would work just as well.

Ingredients

  • a knob of butter
  • 2 large pork chops
  • salt and freshly ground black pepper
  • a few sprigs fresh thyme
  • a wine glass full of dry vermouth or cider
  • 250g/9oz gooseberries

Preparation method

  1. Melt the butter over a moderate heat in ovenproof pan just large enough to take the chops. Add the chops, seasoning them with salt and black pepper and frying them on both sides for a few minutes till the meat and fat is pale gold.

  2. Add the thyme, vermouth or cider and the gooseberries. Cover and leave to cook on the hob for 15 minutes or so. The gooseberries will collapse somewhat and make their own sauce.
  3. Check the sauce for seasoning – it should be acidic but not rasping. I like to have the same sourness as apple sauce. Add a little sugar if it is too sharp for you. Serve alongside the chops.
